Banana Muffins

Ingredients
- 2 Ripe Bananas
- 3 Tbsp Skim Milk
- 6 Tbsp Maple Syrup
- 2 tsp Vanilla Essence
- 2 eggs
- 3 Tbsp Coconut Oil (melted)
- 1 3/4 Cups Self Raising Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- Pinch Salt
- 1 Tbsp LSA Mix
Directions
Preheat oven 180°
If you have a stick blender you can combine the bananas, skim milk, maple syrup, vanilla essence, eggs and melted coconut oil, and blend until smooth. Alternately you can mash bananas with a fork and whisk in other wet ingredients.
Sift flour into a large bowl. Add baking powder, baking soda and a pinch of salt.
Stir through LSA Mix.
Add wet ingredients to dry.
Gently fold through with a spoon until combined.
Spoon into a greased muffin tin and bake for approx. 12 minutes.
Note - Maple syrup can be swapped with honey, and you can use olive oil instead of coconut oil if you prefer.
