Maple and Cinnamon Roasted Pepitas

Halloween screams pumpkins. This may not be a pumpkin recipe, but it is a delicious way to use the seeds.

Pumpkin seeds or pepitas are great just as they are, but we decided to add some extra yummy flavours to the mix.

These roasted maple, cinnamon pepitas can be eaten on their own or added to your own trail mix. You can combine them with other seeds, nuts or chocolate. They could even work as a topping for oats or cereal - even ice cream!

You can scale the recipe up or down depending on the amount you want to make.

Maple, Cinnamon Roasted Pepitas

1 Cup Pepitas

1 Tbsp Coconut Oil - melted

1.5 Tbsp Maple Syrup

2 tsp Cinnamon

.5 tsp Nutmeg

Pinch Salt

Preheat oven 160°

Pour pepitas in a bowl.

Add coconut oil, maple syrup, cinnamon, nutmeg and salt to pepitas. Stir and coat well.

Spread covered pepitas across a lined baking tray.

Bake for approximately 15 minutes or until lightly toasted.

Allow to cool.

Store in an airtight container.
