One Pan Cooking
There’s nothing better than being able to put everything onto one baking tray, pop it in the oven, and in under thirty minutes dinner is on the table.
Here’s one of our favourite salmon one pan meals.
One Pan Salmon and Vegetables with Olives and Oregano

Ingredients
- 100 g Atlantic Salmon
- 2 x Baby Potatoes
- 0.5 Zucchini
- 0.5 Red Capsicum
- 0.25 Onion
- 20g Black or Green Olives
- 0.5 cup Cherry Tomato
- 1 tsp Olive Oil
- 1 Garlic Clove
- 0.5 tsp Dried Oregano
Directions
If possible remove fish from the fridge 15 minutes before cooking.
Preheat oven 200°
Steam potato until tender - the quickest way is in the microwave - and cut into quarters.
Quarter zucchini length ways.
Slice capsicum length ways.
Dice onion.
Halve olives.
Keep cherry tomatoes whole.
Combine all vegetables in a bowl. Add olive oil, crushed garlic, olives, oregano, salt and pepper. Mix and coat everything well.
Using a non stick baking tray or a lined baking tray, place salmon in the centre.
Spread vegetables evenly around fish. Rub some of the oil mix from the bowl onto the top of the salmon.
Cook in the oven for approx. 15 - 20 mins, or until fish is cooked through.
Once done, you can serve the fish with or without the skin.
