Spinach & Feta Breakfast Quiche
Quick, hot breakfast you say? Well this couldn't be easier! Use a mug or small ramekin and have eggs for breakfast in around 5 minutes.
Spinach & Feta Breakfast Quiche

Ingredients
- 30 g Baby Spinach
- 2 Raw Eggs
- 10 g Reduced - Fat Feta
- 1 tbsp Natural Greek Yoghurt
Directions
Roughly chop spinach and place in a ramekin or a mug with a splash of water. Microwave for approximately 20 - 30 seconds until spinach wilts. Remove and drain water.
Crack egg straight into ramekin with drained spinach.
Crumble in feta.
Spoon in yogurt.
Season with salt and pepper. Mix well.
Cover with a paper towel and microwave until egg is cooked through. For 2 eggs microwave approximately 90 seconds.
